We loved making these pancakes, and they will be a hit at the breakfast table for you and your family! These McIntosh apples from Fowler Farms are extra sweet and crisp, which make for the perfect complement to these pancakes. You’ll love them! Plus, there’s something for every picky eater, as we have three ways to wow those picky eaters!

Ingredients:

  • 3 cups of your favorite pancake batter in 3 different bowls
  • 4-5 Fowler Farms Mcintosh apples
  • 1/4 cup melted peanut butter
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • 1/2 cup ricotta cheese
  • 1/2-1 tbsp of cinnamon
  • 1 tsp vanilla
Toppings:
  • Maple syrup
  • Chocolate shavings
  • Blueberry maple syrup (Heat 1 pint of blueberries and 1/2 cup maple syrup on the stove for about 15 mins. Smash the blueberries with a wooden spoon while on the stove)
Peanut Butter Pancake Batter
  • 1 Cup pancake mix (make according to box instructions
  • 1/4 cup melted peanut butter
  • Top with chocolate shavings!
  • Melt peanut butter in microwave for 30 seconds to 1 minute.
Lemon Pancake Batter
  • 1 Cup pancake mix (make according to box instructions)
  • 1 tbsp lemon juice
  • Zest of 1 lemon
  • Top with blueberry syurp
Cinnamon Pancakes
  • 1 Cup pancake mix (make according to box instructions)
  • 1/2 tsp cinnamon
  • Mix all 3 batters.
  • Slice apples in 1/4” rings and then core.
Directions:
  1. Heat your pan or griddle.
  2. Add 1 tbsp of batter to the griddle and top with an apple ring. Then top the apple ring with another spoonful of batter. Flip the pancake when the bottom layer starts to bubble.
  3. Top peanut butter pancakes with chocolate shavings, top cinnamon with maple syrup and top lemon ricotta with blueberry syrup.
  4. Don’t forget to bring the kids in to help you top!

TIP: One thing we should remind you is to make sure you use the exact same size pancake batter each time! We might scale down the cinnamon next time and mix it in with the powdered sugar at the end, and add a teaspoon of brown sugar! We know, we know - sugar! But for a special treat, we think it’s worth it!
