We were so excited to make this Watermelon & Potato Salad recipe! All we have to say is, "This isn't your grandma's potato salad, y'all!" With neither mayonnaise or eggs, this is a healthier and lighter version than the typical picnic style Potato Salad recipe. And it's delicious.
First of all, it's made with watermelon for a fresh, sweet bite. Plus, when you add in those creamy and colorful Klondike Potatoes, combined with the remaining ingredients, and then tossed with homemade dressing, you will undoubtedly have an exciting twist on a must-have family favorite.

Chilled Watermelon & Klondike Gourmet Potato Salad
Ingredients
  • 4 cups cubed, de-seeded, Watermelon
  • 2 cups quartered Klondike Gourmet™ Potatoes - Cooked and cooled
  • 1 cup freshly chopped basil
  • 1 cup feta cheese
  • 1 cup cherry tomatoes - sliced in half
  • 1 small red onion - sliced
  • 1/3 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice
  • 2 tbsp sugar
  • 2 tbsp fresh chives - chopped
  • 2 tbsp fresh mint - chopped
  • Salt and Pepper to taste
Directions
  1. Place prepared watermelon, cooked and quartered Klondike Potatoes, chopped basil, feta cheese, tomatoes and sliced red onion into a large bowl and set aside until ready to use.
  2. In a small bowl, whisk together the olive oil, lemon juice and sugar.
  3. Stir in the chives and mint.
  4. Season with salt and pepper.
  5. Pour dressing over salad and toss lightly.
  6. Chill, serve, and enjoy!
