CarbSmart™ Potato & Creamy Chicken Casserole Recipe
CarbSmart™ Potato & Creamy Chicken Casserole
Ingredients:
- 4 cups CarbSmart™ Potatoes, diced
- 1 Tbsp. olive oil
- 3 cups cooked, shredded chicken (rotisserie chicken works great)
- 10.5oz can cream of chicken soup
- 1/4 cup sour cream
- 1 cup frozen peas and carrots
- 1 tsp garlic powder
- 1 cup shredded mozzarella cheese
- salt and pepper to taste
Instructions:
- Preheat the oven to 375F.
- Add diced potatoes, olive oil, salt and pepper to a casserole dish and mix to coat potatoes. Cover the casserole dish with foil and bake for 20 minutes.
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, peas and carrots, mozzarella cheese salt and pepper. Mix to combine ingredients.
- Remove potatoes from the oven and carefully transfer the chicken and vegetable mixture to the casserole dish. Mix all ingredients together in the casserole dish.
- Bake for 25-30 minutes, until the cheese is melted and casserole is golden brown. Enjoy!
