Watermelon Mojito
Ingredients:
For the Drink:
- 1 lime, cut in half
- 6–8 fresh mint leaves, plus more for garnish
- 1/2 to 1 oz simple syrup (adjust to taste)
- 1/2 cup fresh Melon 1 watermelon juice (see below)
- 11/2 oz white rum (optional)
- Sparkling water or club soda
- Optional: chili-lime seasoning for glass rim
For Watermelon Juice:
- 2 cups Melon 1 cubed seedless watermelon
- Blend and strain for smooth juice, if preferred
For Watermelon Ice Balls:
- Mini melon baller or small ice cube tray
- Seedless watermelon, scooped into small balls and frozen ahead of time
Instructions:
- Use a melon baller to scoop small rounds from seedless watermelon. Place in a sealed zip top bag and lay fat in your freezer so ice balls are arranged in a single layer. Freeze at least 2-3 hours.
- Blend watermelon cubes until smooth. Strain through a fine mesh sieve for a clearer juice and chill until ready to use.
- Add a chili-lime rim by dipping the lip of a sturdy glass in simple syrup, then dip in chili-lime seasoning.
- Build your drink by adding mint leaves and fresh lime juice to your glass then top with frozen watermelon ice. Add rum, simple syrup, fresh watermelon juice, and club soda. Garnish with more fresh mint and a slice of watermelon. Enjoy!
