  1. Preheat oven to 350 degrees F.
  2. Prepare a muffin tin by spraying with non-stick cooking spray.
  3. In a large bowl combine spinach, quinoa, eggs, cheese, onion, bacon and desired amount of salt and pepper; whisk to mix well.
  4. Spoon mixture into muffin tins, filling to the top of each.
  5. Bake for 15-20 minute, until edges turn golden brown.
  6. Remove from oven and let stand for 3 minutes before removing from the tin. Serve warm and enjoy!

Taylor Farms Arugula Side Salad

  1. Place Arugula in a small bowl.
  2. Squeeze 1/2 of the lemon over the Arugula.
  3. Add Salt & Pepper to taste.
