Soup season has officially arrived and is there any soup more comforting than Chicken & Dumplings? This classic soup recipe is one of our favorites once those cooler temps arrive and we are so excited to share this updated recipe with you.

Chicken & Minute Mashers™ Potato Dumplings from Farm Star Living

Classic Chicken & Dumplings can be time-consuming but we've recreated this recipe and added a few shortcuts and healthy upgrades thanks to Minute Mashers™ from Green Giant™ Fresh. Rather than using plain old all-purpose flour, we're using Minute Mashers™ mashed potatoes as the base for this dumpling recipe which means you're getting even more servings of healthy veggies when it's time to eat.

Soup Ingredients:

  • 2 Tbsp butter
  • 1 cup onion, diced
  • 1 cup celery, diced
  • 1 cup carrots, diced
  • 1 Tbsp all-purpose flour
  • 4 cups chicken broth
  • 1/2 cup whole milk or cream
  • 1 rotisserie chicken, deboned and shredded
  • 2 bay leaves
  • 1 Tbsp fresh thyme
  • salt and pepper to taste
  • garnish with fresh parsley, optional

Dumpling Ingredients:

  • 1 package Buttery Salt & Pepper Minute Mashers™ or 2 cups leftover mashed potatoes
  • 1 1/2 cups all-purpose flour
  • 2 eggs, beaten
  • 1 tsp baking powder
Directions:
  1. Melt butter in a large pot then add onion, celery, and carrots. Cook until soft. Add flour and stir to coat vegetables. Slowly add milk and chicken broth.
  2. To the pot add chicken, bay leaves, fresh thyme, salt and pepper and bring to a low boil.
  3. While the soup cooks, microwave Minute Mashers™ mashed potatoes according to package instructions. Mash the bag very well with oven mitts.
  4. To a large bowl add mashed Minute Mashers™, flour, baking powder, and eggs. Using a fork, mix and mash ingredients until well combined. If the dough is too wet and sticky to handle, slowly add flour until dough forms. Note: you should be able to scoop dough with a spoon.
  5. To the simmering pot of soup add 1-2 Tbsp size scoops of mashed potato dough. Cover and cook for at least 20 minutes. Note: mashed potato dough balls should be about the size of a ping pong balls when raw and will nearly double in size after cooked.
  6. Once dumplings are fully cooked, stir in fresh parsley and serve.
