September is National Self-Care Month, and we're all about sharing ways you can take the best care of yourself – through health tips, healthy recipes, farm-fresh foods, and ways to take care of your mind, body, and spirit. A tasty way to take care of yourself is to include nourishing foods that not only help you to feel good, but they also fuel your body with the proper fuel to get through your busy days. If you catch yourself feeling burnt out, tired, or just "meh" overall, then it's time to take a look at the types of foods you're eating.
One of our favorite and healthiest foods we suggest eating every day is, you guessed it, potatoes. Potatoes got a bad wrap when the low-carb craze hit diet culture a number of years ago, but there's more evidence now that shows just how good for you potatoes, and other complex carbohydrates, are for your body and mind. Complex carbs, like the ones in potatoes, are used as energy on your body and in your brain. But potatoes don't just provide you with healthy carbs, they also provide you the following beneficial nutrients:
- Only 110 Calories: One medium potato makes a healthy side for any meal, or a hearty mid-day snack!
- Potassium: One medium potato with skin provides 18% of the recommended daily value of potassium.
- Vitamin C: Healthy potatoes are a great source of Vitamin C, providing you with 45% of your recommended daily value.
- Fiber: Get 2 grams of Fiber per serving! One medium potato with skin = 1 serving.
- Vitamin B6: Potatoes are a good source of Vitamin B6 with 10% of the daily recommended value.
One variety of potato that we are loving in a variety of recipes are these Goldust® potatoes from our friends at Green Giant™ Fresh. These potatoes are known throughout the fresh potato industry as the very best yellow potato available – and for good reason. It’s a perfect union with smooth yellow skin and vivid yellow flesh. When cooked, the dense flesh cooks to a wonderful buttery deliciousness. Green Giant™ Fresh suggests using this particular potato when baking, broiling, mashing, steaming, roasting, grilling, or microwaving which makes them the perfect potato for our new Potato & Black Bean Taco recipe.
So, as summer slowly begins turns into fall, be gentle with yourself and be mindful about the foods you're feeding your body. If you fuel your body with clean, healthy veggies (and prepare them in delicious ways that keep you coming back for more), you'll certainly begin to feel how this positively impacts not only your body, but also your mind and spirit, too. Take a look at our healthy recipes for inspiration and don't forget to share on social and tag us in your creations so we can connect with you. Cheers to you taking better care of yourself one step at a time!
