One of the challenging things about packing your kids’ lunches is being able to try new and unique ideas daily. While it’s hard to come up with something different and every day, we think that this Roasted Sunbursts® Tomato Hummus Wrap is a meal that can become one of your staples. Easy, healthy, and yummy – we know that the kids will love it.

SunBursts® are among many of NatureSweet®’s flavor filled tomatoes that are developed with the utmost care; this includes being socially conscious! NatureSweet® uses coconut husks instead of soil to help the plant resist disease, providing for less use of harsh chemicals, as well as reduce their water use by 80%.

The SunBursts® aren’t afraid to be the star of the show, and they are a great stand-alone snack. However, we love having them in this homemade hummus and then added to the wrap for double the nutrients – and double the flavor!

With the combination of tomatoes, chickpeas, lettuce and flatbread, you’ll be giving your kids a nutrient-packed meal you all will love.

TIP: When mixing the hummus in your food processor, add as much olive oil as you need to create a creamy consistency (usually 1-2 tbsp).

Hummus Ingredients:

  • 1 10.5-oz. container NatureSweet® SunBursts® tomatoes, halved
  • 2 tbsp melted Ghee Butter
  • 2 tbs Olive Oil
  • 2 cups canned chickpeas - drained
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 1 tbs fresh lemon juice
  • Salt and Pepper to taste
Wrap Ingredients:
  • 1 10.5-oz. container NatureSweet® SunBursts® tomatoes, halved
  • 1 head of Romaine Lettuce, chopped
  • 1 cucumber, sliced thin
  • 1 avocado, sliced
  • 4 pita bread rounds
  • Salt and pepper to taste
Instructions:

Hummus:

  1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper.
  2. Place SunBursts® in a bowl and drizzle with melted Ghee Butter, salt, and pepper. Stir to coat.
  3. Roast in the oven for 20-30 minutes or until SunBursts® Tomatoes edges are crispy.
  4. Once fully cooked, remove from the oven and set aside to cool.
  5. In a food processor, add chickpeas, tahini, garlic, lemon juice and blend to combine. Taste the hummus and adjust seasoning as needed.
  6. To the food processor, add the roasted SunBursts® Tomatoes, and pulse just a couple of times to combine all ingredients. Add olive oil as needed.
For the Wrap:
  1. Toast pita bread rounds in hot skillet, 1 minute on each side.
  2. Spread 1-2 tbsp. hummus on pita round.
  3. Top with chopped romaine, sliced cucumbers, and SunBursts® tomatoes, avocado.
  4. Salt and pepper to taste. Enjoy!
