French Onion Smashed Potatoes
Ingredients:
- 2 lbs Green Giant™ Fresh Klondike Gourmet® Mini Red Potatoes
- 2 tablespoons olive oil
- Salt and freshly cracked black pepper
- 2 large Green Giant™ Fresh Vidalia® Sweet Onions, thinly sliced
- 4 Tbsp. unsalted butter
- 1 Tbsp. balsamic vinegar (optional, for depth)
- Salt, to taste
- 11/2 cups shredded Gruyere cheese
- 2 tablespoons chopped fresh thyme or parsley (or a mix)
Instructions:
- Add potatoes to a large pot, cover with cold water, and season with salt. Bring to a boil, then simmer until fork-tender, about 15–20 minutes. Drain and let cool slightly.
- In a large dutch oven over medium-high heat, melt 4 Tbsp. butter. Add sliced onions and stir to coat in butter. Cook with the lid on for ten minutes. Remove lid, stir onions, and cook with the lid on for 10 more minutes. Note: The onions should not be browning or burning at this point. If onions are starting to crisp, reduce the heat. Remove the lid and reduce heat to low. Add a pinch of salt and stir onions. Cook for another 10 minutes. At this point the onions should be very soft and golden brown, but not crispy. Turn off the heat, and add 1 Tbsp. balsamic vinegar and stir. Set aside.
- Preheat oven to 425°F. Line a baking sheet with parchment paper. Place cooked potatoes on the sheet. Use the bottom of a glass or potato masher to gently smash each potato. Drizzle with olive oil or spray lightly with cooking spray and season with salt and pepper. Bake for 20–25 minutes, or until crispy and golden on the edges.
- Spoon caramelized onions over each smashed potato. Sprinkle generously with Gruyere cheese. Return to oven for 5–8 minutes, or until cheese is melted and bubbly.
- Sprinkle with fresh thyme or parsley before serving. Serve hot as a savory side or appetizer!
