Ingredients:
- 1 Green Giant™ Fresh Vidalia® Sweet Onion, finely chopped (about 2 cups)
- 16 oz. low fat cottage cheese
- 1 cup plain Greek yogurt
- 1 Tbsp olive oil
- 1 tsp dried dill
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh chives or parsley, chopped
- Heat the olive oil in a medium skillet over medium heat. Add the finely chopped Vidalia® sweet onion and cook, stirring occasionally, until the onions are soft and caramelized, about 10 minutes.
