Ingredients:

  • 1 Green Giantâ„¢ Fresh Vidalia® Sweet Onion, finely chopped (about 2 cups)
  • 16 oz. low fat cottage cheese
  • 1 cup plain Greek yogurt
  • 1 Tbsp olive oil
  • 1 tsp dried dill
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh chives or parsley, chopped
Instructions:
  1. Heat the olive oil in a medium skillet over medium heat. Add the finely chopped Vidalia® sweet onion and cook, stirring occasionally, until the onions are soft and caramelized, about 10 minutes. Reduce heat if onions begin to brown too quickly. Remove from heat and add the garlic, paprika, salt and pepper. Add to a large bowl and set aside.
  2. In a blender or food processor, blend the cottage cheese until smooth and creamy. Add blended cottage cheese and Greek yogurt to the onion mixture. Season with salt and pepper. Taste and adjust seasoning if necessary.
