There's one guaranteed way to make every meal healthier – add more vegetables! When you're craving something comforting, but also keeping your health in mind, try this Potato Lasagna made with CarbSmart™ yellow potatoes from our friends at Green Giant™ Fresh Potatoes.

Instead of pasta, this recipe calls for thinly sliced potatoes as a veggie substitute. By using complex carbohydrates like potatoes, rather than simple carbohydrates like pasta, you're choosing the right carbs to fuel your body. CarbSmart™ potatoes have 55% fewer carbs than rice or pasta and you'll love indulging in the creamy buttery flavor of this potato variety. Whether you choose to prepare them baked, mashed, boiled, or grilled, these potatoes are Carbs Well Spent™.

This recipe is not only a great lower-carb option, but it's also completely gluten free! Make this a full meal by serving it alongside a salad or your favorite steamed vegetables. Check out the tips below to make sure you nail this easy recipe.

  • Protein: Feel free to swap the ground beef for a vegetarian option.
  • Bake: If the edges of your lasagna begin to brown before the center, line the edges with foil during the second bake as you would a pie.
  • Sliced Potatoes: Using a mandoline slicer is the preferred method for achieving thin, even slices of potato. We like this option. If you don't have a mandoline slicer, then carefully use a sharp knife to create very thin slices of potato.
